Development of innovative vegetable preserves maintaining the beneficial composition of nutrients using a unique variety of white beet and white carrot in order to develop agricultural and processing production
The project was initiated by all consortium members as a joint idea to develop innovative solutions.
The aim of the operation is to develop innovative vegetable products that maintain a beneficial composition of nutrients using a unique variety of white beet and white carrot, while introducing an innovative cultivation technology and production organization method.
A new variety of beet "snow globe" and white carrots for cultivation on farms will be used to achieve the goal.
Project activities
Stage 1. Preparation of guidelines for the cultivation of vegetables on the basis of soil tests – Partner,
Stage 2. Purchase and delivery of equipment for the cultivation of carrots and beets necessary for agricultural producers,
Stage 3. Purchase and delivery of materials and equipment necessary for the Leader to carry out technological tests of the production of depigmented vegetable concentrate,
Stage 4. Tests of the obtained products in terms of their composition and storage tests conducted by the Leader and Partner I.
Stage 5. Preparation of cultivation sites by agricultural producers, in accordance with the developed final concept of beet and carrot cultivation for traditional and regenerative cultivation, and then delivery of raw material samples to the Leader and Partner I for the purposes of development research.

- Introducing new types of carrots and beetroot into the processing industry, rich in health-beneficial nutrients, i.e. dietary fiber, sugars, protein, lipids, vitamins: C, B6, E, K, folic acid, as well as minerals: calcium, iron , magnesium, potassium, phosphorus, zinc and sodium. Antioxidants contained in vegetables, also known as antioxidants, are compounds that remove excess free radicals from the human body. They slow down the body's aging processes and prevent the development of diseases known as civilization diseases.

Introducing innovative regenerative technology for growing carrots and beets, which will have a positive impact on the environment and climate change. -
Implementation of improved carrot and beet processing technology will contribute to reducing the loss of nutrients. -
Obtaining new vegetable and/or fruit and vegetable products with high nutritional and health-promoting value (discolored concentrate and puree) based on new types of carrots and beets and improved technology of their processing, in a customer-friendly form of packaging. -

Results achieved
As a result of the operation, innovative vegetable products have been developed that preserve the favorable composition of nutrients using a unique variety of white beet and white carrot. The innovative regenerative cultivation technology of the new beet variety “snowball” and white carrot was introduced, as well as methods of production organization. The main objective of the operation was achieved 1 new product was created (decolorized white beet concentrate snowball) and 2 significantly improved products (decolorized white carrot concentrate, white vegetable puree) .
The results of the measures taken under the operation:
a) introduction of new types of carrots and beets rich in beneficial nutrients, i.e.: fiber, sugars, protein, lipids, vitamins: C, B6, E, K, folic acid, as well as minerals: calcium, iron, magnesium, potassium, phosphorus, zinc or sodium.
b) introduction of innovative regenerative carrot and beet cultivation technology, with a positive impact on the environment and climate change;
c) improved technology for processing carrots and beets;
d) the possibility of obtaining new vegetable and/or fruit and vegetable products on the basis of new types of carrots and beets and improved technology for their processing
e) enrichment and diversification of the production activities of the processor and farms;
f) dissemination of knowledge about the beet variety “snowball” and white carrot “White Satin".
