Development of an innovative product in the form of Premium Fruit Crisps made from apples, based on the launch of a drying line for the production of a new product with innovative characteristics - fruit crisps with enhanced health benefits

Project title: Development of an innovative product, in the form of Premium Fruit Crisps, made from apples, based on the start-up of a drying line to produce a new product with innovative characteristics - fruit crisps with enhanced health benefits, using NFC juice and osmotic solution, sales and modern marketing methods.

The subject of the operation is the development of an innovative technology for the production of dried fruit enriched with health-promoting ingredients from fruit juices, in particular natural fruit crisps with significantly enhanced health-promoting and sensory qualities (appearance, aroma, taste, texture).

The main objective of the operation is the "Development of an innovative product, in the form of Premium Fruit Crisps, made from apples, on the basis of the launch of a drying line for the production of a new product with innovative features - fruit crisps with increased health-promoting qualities, using NFC juice and osmotic solution, sales and modern marketing methods".

The objective of the operation will be achieved through the implementation of both industrial research and development works, as a result of which a drying line will be launched, comprising an advanced manufacturing process of several stages leading to the production of bioactive dried fruit in the form of chips with health-promoting properties, attractive texture and modified taste. The drying line will be set up in a production facility owned by Vigrana Sp. z o.o.. 


Implementation of the operation will be possible once the milestones have been achieved:

  1. Development of a formulation for an innovative osmotic solution based on high quality fruit concentrate and fresh fruit juice.
  2. Completing, integrating and modifying the key equipment of the demonstration drying line in order to obtain high quality material at each stage of the technological process.
  3. Create a drying demonstration line and run three repeatable production cycles while maintaining product and process stability.
  4. Development of optimal technological parameters for the drying demonstration line, taking into account product quality and energy consumption of the process.

The operation aims to develop a process innovation not previously used in Poland. 

The main benefits of the project

The result of the operation will be the implementation of an innovative drying line for the production of fruit crisps with improved taste and health-enhancing properties in the operations of a member of the Vigrana Sp. z o.o. operating group. The implemented innovation will allow the production of fruit crisps with innovative features. 

Main results of the operation:

  • Implementation/development of the technology protected by patent PL 219810 "Method for obtaining chips from fruits or vegetables";
  • Development and start-up of a drying line in order to obtain test material in the form of a trial batch of health-promoting fruit crisps (especially apple crisps), with an increased content of bioactive substances and attractive sensory qualities;
  • Development of a product with innovative features in the form of health-promoting fruit crisps;
  • Scientific publications (at least 3)

Health-promoting fruit crisps are an alternative to snacks commonly regarded as unhealthy (in particular potato crisps) and can also be a component of a balanced diet to support the proper development of the young organism and convalescence of sick people due to their health-promoting properties.
